Thai Style Peanut Sauce

If you looking for a tasty sauce full of flavour and a bit of zing, you can't go past this delicious peanut sauce.


Shared with me from my mother in law, this recipe has accompanied many dishes over the years including this month's most popular recipe on the blog, Thai BBQ Chicken

Thai Peanut Sauce



2 teaspoons coriander root -can substitute ground coriander if necessary.
1 small red chilli
2 cloves garlic
*all the above, finely chopped.
1 Tablespoon sugar
2 Tablespoons white vinegar
⅓ cup smooth peanut butter
¼ cup coconut milk

•Combine coriander root, chilli, garlic, sugar and vinegar in a small saucepan.
Stir over medium heat until sugar is completely dissolved.
•Reduce heat to low and stir in peanut butter and coconut milk until well combined. Remove from heat immediately.**It is important not to overheat as the oil will split from the peanut butter.
