Banoco Lime Slice


Banana, coconut and lime, what a beautiful combo these three make. 
I was tempted to call this one Cobananut Lime Slice but Miss2 and Mr4 can't even say it and the older two just looked befuddled. 

Fear not! I will keep my creative energy for recipes instead of crazy names.


Banana Coconut Slice with Lime Icing




Banana Coconut Slice
---ingredients---
2 medium very ripe banana
¼ cup brown sugar
1 Tablespoon golden syrup
70g cooking margarine or butter - melted
1 egg
1 cup self raising flour
½ teaspoon cinnamon
¾ cup desiccated coconut
---method---
•Preheat oven to 180°C (356°F)
•Whisk banana and sugar together until well combined then stir in golden syrup.
•Mix in all other ingredients until you have a smooth batter.
•Pour mixture into a lined slice tin (23x18cm)
•Bake for about 20 minutes, until top is browned and slice is firm and slightly springy, allow to cool before icing.

Lime icing 
---ingredients---
1 cup icing sugar
30g cream cheese
Zest and juice of 1 small lime (approximately 2 teaspoons juice)
---method---
•Whisk all 3 ingredients together to make a smooth spreadable icing.
•Spread evenly on top of cooled slice/cake.
** if icing mix is too thick, add ½ teaspoons of hot water until spreadable consistency is reached.
•Refrigerate until icing has set, cut into squares and enjoy!
