Sticky Ginger Pork

It's Sticky, it's sweet and it's simple to make. Don't let the fact that this sticky pork recipe is twice cooked put you off, the effort from you is minimal and the result is delicious. It's also a great way to coax the kids into eating their veggies, that sweet sticky coating will be hard to resist.

Feel free to use cheaper cuts of pork, because you're starting off with a slow cook, the meat will tenderise nicely. 
Any vegetables can be added, my preferences are carrot, capsicum, beans, spring onion and broccoli but it always depends on what's on hand at the time.


Sticky Ginger Pork

Serves 4

---Ingredients---
4-500g Pork, cut into cubes (any cut will work)
1 Tblsp cooking oil

Stock-
2 cups chicken stock
¼ teaspoon ground ginger
2 cloves garlic, crushed
1 Tbls sugar

Glaze-
1 medium red chilli, finely chopped
¼ teaspoon ground ginger
2 Tbls Brown sugar
2 Tbls honey
3 Tbls soy sauce
½ teaspoon lime juice

---Method---
•Preheat oven to 130°C
*You can use a slowcooker instead.
•Mix all stock ingredients together in a medium baking dish (be sure your baking dish has lid or cover with foil).
•Add Pork, ensure meat is completely covered with liquid. Put lid on and cook 1 ½ -2 hours.
• Make yourself a cup of tea and put your feet up for a while.
•Mix all glaze ingredients in a bowl or jug.
•Remove pork from liquid.
*At this point, I strain the liquid into a freezer container. It makes a great base for noodle soup.
•Heat oil in a fry pan and lightly brown the drained pork.
*add any desired vegetables at this step.
•Add the glaze and stir until sauce is thick, dark and sticky.
